Thanksgiving will soon be upon us!
It’s a time to reflect upon all of our blessings and be thankful for what we have.
But Thanksgiving is also an interesting paradox because it starts out with mass excitement and anticipation about all the delicious food that is being prepared.

Speaking of splurging, here is my favorite recipe for a traditional Thanksgiving dinner—pumpkin pie!
I’ll tell you how old this recipe is—I got it from the mother (Barb) of my boyfriend in my freshman year of high school—so it’s going on 45 years old, and everybody still asks me to make it for the holidays!

Here it is—I hope you enjoy it:
Barb’s Pumpkin Pie
Serves: 8-10
2 eggs
2 cups pumpkin puree (fresh or canned)
3/4 cup sugar
1 2/3 cups light cream
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon ginger
1/4 teaspoon cloves
Whipped heavy cream for topping (optional)
Preheat oven to 425°.
Beat eggs in a medium mixing bowl. Add other ingredients and beat until well-mixed.
Bake at 425° for 15 minutes, then reduce oven temperature to 350° and bake for an additional 45-55 minutes or until a knife inserted near center comes out clean.
Cool and serve topped with whipped cream if desired.
